Ingredients

Egg, fresh, whole, raw, 7 large
Spinach, fresh, 2 cup
*1 med yellow onion, .5 serving
bacon, lower sodium 2 pcs, 4 serving
*Cheese, Manchego, 4 oz shredded
Bacon grease, 2 tsp
Salt, .5 tsp
Skim milk, .5 cup
Pepper to taste
Directions
Cook bacon, set aside to drain & cool. Reserve 2 tsp bacon grease. Preheat oven to 400
In oven-proof skillet, sweat onion in bacon grease untill slightly soft.
While onions are cooking, beat eggs vigirously until slightly frothy. Add skim milk & beat again. Add salt & pepper to taste.
Once onions are slightly opaque, add fresh spinach to pan, allowing to wilt slightly, about 2 mins. Once slightly wilted, pour in egg mixture and stir slightly. Add crumbled bacon & shredded cheese, stir again slightly.
Allow bottom & edges off eggs to set, no more stirring!, about 2 minutes. Once edges are set- place in oven, allow to bake for 10-15 minutes, until no longer watery in middle of pan.
Take out of oven, allow to set for 10 minutes, then slide out or turn onto a serving tray. I find a pizza cutter works best, cut into 6 wedges, and enjoy!
