    1 acorn squash
    1/4 c. brown sugar *
    2 Tbsp butter

    *I have also used 2 Tbsp fresh maple syrup


Cut acorn squash in half, remove seeds and connecting fibers, peel "shell" off the meat. (To facilitate ease in peeling the acorn squash, I boil the whole acorn in water until you can pierce the shell with a fork - usually about 20 minutes.)

After peeling the acorn squash, cut it into cubes. Place in skillet, add butter and a little water - about 1/3 c., cover and let cook until desired consistancy. Add brown sugar, stirring often to mix well, replace lid and turn off heat, let sit for about 5 minutes then serve.
