Ingredients

    1 whole egg
    2 egg whites
    1 cup of spinach
    1 tablespoon of coconut oil


Directions

Scramble eggs and eggs whites in a bowl and add salt, pepper, and spinach. Heat coconut oil in pan on a low to medium heat. Once oil is mildly heated, pour scrambled eggs into the pan. Let cook until almost set, and fold the omelet in half by using spatula. Once folded, turn the omelet over to cook on the other side until cooked or to your liking.
