Ingredients

    Salsa -chop & combine salsa ingredients

    11 oz pineapple (drained)
    11 oz Mandarin Orange Slices (drained)
    1/2 Small Red Onion
    2 t lime juice
    1 Jalapeno Chili (seeded)

    Rub for Fish - mix together & rub on fish

    5 t Brown Sugar
    5 t Lime Juice

    4 fish fillets (3 oz each)

    Spray pan with noncook cooking spray & fry 2-3 minutes on each side on med-high heat. Do not overcook, just until fish flakes.

    Spoon Salsa over fish fillets. Wild rice is a nice side to go with this fish.
