Ingredients

    2 Sweet potato, 5" long
    1/2 cup Peanut Butter or nut butter of your choice
    2 Eggs,
    2 tablespoons Honey or Agave
    2 teaspoons Vanilla Extract
    2 scoops vanilla protein powder
    1/2 teaspoon Ginger
    1/8 teaspoon Salt
    3/4 cup Flour - Unbleached White Whole Wheat
    1/2 cup Flax Seed Meal (ground flax)
    1 tablespoon Whole Flax Seed
    1 tablespoon Whole Chia Seed
    2 teaspoons Baking Powder
    1 bag Chocolate chips

Directions

1. Preheat oven 375 degrees.

2. Microwave sweet potatoes until cooked (my microwave has a baked potato setting and I use that). Let cool slightly. Peel skin away from the flesh of the potato. Mash with a fork and place in a medium bowl.

3. Add nut butter, eggs, and honey and vanilla. Mix well. Mix in protein powder. Add remaining ingredients except chocolate chips. Mix well. Fold in chocolate chips.

4. Using a cookie scoop place each portion on a parchment paper lined baking sheet. Bake for 10-12 minutes. Let cool on a wire rack.
