Number of Servings: 6

Ingredients

    1 - 1.5 Tbsp coconut oil
    2 cloves of garlic, minced
    1/2 onion, chopped
    1 - 2 Tbsp garam masala Indian spice
    2 stalks of celery, chopped
    2 carrots, chopped
    1 small sweet potato, chopped
    6 cups of vegetable broth
    3/4 Cup of dry lentils, any colour
    1/4 Cup of raw buckwheat groats (or millet, brown rice)
    3 cups of swiss chard (or spinach)

Tips

Should you not wish to blend the soup, it won't have as much of a detox effect, but will still taste great!


Directions

Heat garlic and onion in coconut oil on medium heat for about 5 minutes.

Add chopped celery, carrot, and sweet potato. Stir in spices, and continue to heat for 5 - 10 minutes.

Add vegetable broth, lentils, and buckwheat. Stir and turn to high heat until boiling.

Once boiling, cover and simmer for 30 - 40 minutes.

Once all vegetables are soft, remove from heat and stir in greens.

Blend soup with a hand blender or transfer to a food processor, and blend until smooth.

Serving Size: Makes 6 - 8 bowls of soup.

    Very Good
    Very tasty. The only change I made was I used canned lentils and washed them to help lessen the sodium and I also omitted the rice. - 2/27/15
