Introduction

Ingredients

    1 pkg. (6.3oz) Gorton's Signature Grilled Tilapia Fillets
    1/3 cup low fat ranch salad dressing
    2 Tbsp barbecue sauce
    1/2 yellow onion, chopped
    1 Tbsp olive oil
    1 1oz can whole kernel corn, drained (I used no salt added)
    1 15oz can black beans, rinsed and drained (I used low sodium)
    12 large romaine lettuce leaves

Directions

Prepare the tilapia fillets according to the package directions. Cool slightly, and then chop into pieces.

While fish are cooking, mix together barbecue sauce and ranch dressing in a large bowl and set aside. Heat olive oil over medium heat in a large skillet. Add onion and cook about 4 minutes, until onion is translucent and beginning to brown. Add rinsed and drained black beans and corn. Stir to combine. Cover, reduce heat to low, and allow to heat while fish finishes cooking.

Tear lettuce leaves into 3 bowls, dividing equally. Add chopped fish to dressing bowl and top with bean mixture. Stir to combine. Divide equally among the bowls of lettuce. Serve immediately.
