Introduction

This is a twist on another steel cut oatmeal recipe, but is cooked on the stove rather than slow cooker, and has cranberries and a little less apple. Ingredients

    1.5 cups--- Quaker Steel Cut Oatmeal
    1----------- medium apple (about 6 ounce) diced
    1/3 cup----dried cranberries
    3/4 tsp-----ground cinnamon
    3/4 tsp-----vanilla extract
    3/8 cup---- light brown sugar, packed
    4.5 cups--- water

Tips

I was going to make the Apple Steel Cut Oatmeal on this site, but discovered I only had 1.5 cups of oatmeal and one big apple, so added dried cranberries and adjusted all the seasonings. This is pretty sweet. I think next time, I'll only use 1/4 cup light brown sugar. I am testing to see if it will freeze. It lasts covered in the refrigerator 6 days. Cook up a batch and have wonderful, hot breakfast in the time it takes to reheat a serving in the microwave (about 1.5-2 minutes) on busy weekday mornings.


Directions

Add all ingredients to large saucepan. Heat til just boiling at edges, then simmer 25-30 minutes, til oats are soft and cereal is thick and creamy. Take off heat and let sit 5 more minutes.
