Number of Servings: 8


    1 pound elbow macaroni
    1/4 cup nonfat yogurt
    1/2 cup low fat mayo
    2 teaspoons red wine vinegar
    1 teaspoon sugar
    1 can (15 oz) chickpeas
    2 bunches broccoli, chopped
    5 scallions, thinly sliced
    1 red pepper, chopped
    3 jalapenos, chopped
    3 large carrots, shredded
    salt & pepper to taste


Boil macaroni in salted water and steam the broccoli.
While that's going, in a large bowl combine the yogurt, mayo, sugar, vinegar, salt, and pepper. Drain and rinse chickpeas. When the macaroni is done, drain and run under cold water. Transfer into the bowl with the dressing and add veggies and chickpeas. Makes 8 servings.
