2 cups shredded sharp cheddar cheese
8 oz. full fat cream cheese
1/2 cup full fat mayo
4 oz. can diced pimientos, drained
1 fresh jalapeno pepper, chopped fine (optional)
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. cayenne pepper
salt & black pepper to taste
Tips
This recipe is very adaptable depending on your preference for types of cheese and spices. I had some American cheese I wanted to use up so I substituted that for the cheddar. I didn't have pimientos but did have some chopped red chili peppers in the freezer, so that's what I used. If you don't want the jalapeno, just eliminate it, or substitute something else for that crunch while still keeping your the carbs low. The spices can be changed around to your preference as well. The cheese was salty enough without adding more salt and I like black pepper so I was pretty generous. We filled celery sticks with this cheese spread and both of us knew this recipe will be repeated many times, even if we aren't worried about our carbs! It is really that good! And super easy! I can't wait to try it with other cheeses and maybe roasted poblano peppers!
