Introduction

One of my favorite comfort foods. Very stick to your ribs. :) One of my favorite comfort foods. Very stick to your ribs. :)

Ingredients

    1 lb. Beef stew meat
    1 c. chopped Green pepper
    1 c. chopped White onion
    1 1/2 c. sliced Fresh mushrooms
    1 Tbsp. Country crock (regular/soft)
    2 packets Marcum pork gravy mix (2 c. prepared)
    1 package Mantia's Italiano wide egg noodles

Tips

If sauce becomes too thick simply add a small amount of water and stir. repeat until desired consistency is met. This dish is also awesome served over brown rice instead of noodles.


Directions

Add 1 Tbsp. country crock to saute pan, turn heat to med high & allow to melt. When melted & pan is hot, add beef tips & allow to brown, about 7-10 minutes. Once meat is browned add onions, green peppers, & mushrooms. Reduce heat to med. cover & allow all to simmer for about 45 minutes. Make gravy per package instructions and add to pan, continue to simmer uncovered, allowing sauce to reduce until desired thickness, about 15 minutes stirring occasionally. Put water in pot to boil for noodles & cook per package instructions.
Drain noodles & add 1 1/4 c. to each plate. Spoon 3/4 c. of tips & sauce over noodles.

Serving Size: 11/4 c. noodles w/ 3/4 c. tips & gravy mixture
