Ingredients

    1 pound ground beef
    4 cups cooked rice
    1 10 oz can enchilada sauce
    1 14 oz can diced tomatoes
    1 can refried beans
    1 15 oz can of drained corn
    3 cups (separated) shredded colby jack cheese

Directions

1. Preheat oven to 350 F
2. In a skillet cook ground beef untile browned and done. Drain
3. Mix all ingredients (reserve 1.5 cup of cheese)
4. Stir well to combine
5. Spread into 9x 13 dish
6. Spread remaining cheese on top
7. Bake for 30 minutes or until heated through.
