Introduction

Number of Servings: 24

Ingredients

    2 packet active dry yeast
    1 cup warm water
    1 cup warm milk (unsweetened almond)
    6 tbsp sugar
    1.5 tsp salt
    7-8 cups flour
    2 eggs, slightly beaten
    1/4 cup butter or margarine melted

Tips

if recipes is halved, take care with directions.I ended up with 20 sliders when all i wanted was a hamburger bun!


Directions

1. in a large bowl, dissolve yeast in warm water
2. In a small bowl, combine warm milk, with sugar and salt. Mix well, then add to the yeast
3. Add 2 cups of the flour to the mixture and beat 2 minutes at medium speed. Add 3/4 cup flour. Beat at high speed 2 minutes, scraping bowl occasionally. Stir in beaten eggs and melted butter.
4. Stir in enough additional flour to make a stiff dough. Continue with a bread hook for 8-10 minutes (adding up to 2 additional cups)
5. Place dough in a greased bowl, turning to grease the top. Cover and let rise in a warm place until doubled in size - about 45 min. Punch down, cover and let rise again until less than doubled - about 20 minutes
6. Divide dough into 20-24 equal portions and form each portion into a smooth round ball. Place on silpat about 2 inches apart. Press to flatten. Cover and let rise in a warm place until doubled, about an hour.
7. Preheat to 375. Bake 15-20 min (14 convect)
