Ingredients

    2 Yams (medium)
    1 red onion diced
    2 bell peppers (red and orange)
    1 1/2 zucchini
    1/2 clove garlic
    1 Tbls butter (melt with one of the Tbls of olive oil)
    2 Tbls olive oil (use remaining Tbls of olive oil to coat pan)
    salt to taste
    1 tsp cumin
    1 Tbls basil
    1 tsp garlic powder

Directions

bake 425 for 25min then broil 7min
