    1 Tblsp. unsalted butter at room temperature
    1 Tblsp. all-purpose flour
    2 oz. slab bacon, cut into 1/4 inch pieces
    2 chicken leg quarters
    2 shallots, peeled and halved
    3/4 cup dry white wine
    3/4 cup low-sodium chicken broth
    1 teasp. white wine vinegar


The sauce is good over mashed potatoes.


Mash butter and flour together into a paste; set aside. Cook the bacon in a deep skillet or Dutch oven over medium heat, stirring frequently, until crisp. Transfer to a plate with a slotted spoon.

Season chicken, if desired, with salt and pepper. Add chicken to bacon grease and cook, skin-side down, until skin is crisp. Remove chicken to a plate. Discard all but 2 tablespoons of the bacon fat from the pan.

Add the shallots to the pan and cook until golden brown. Add the wine and cook 8-10 minutes. Add the broth and bring to a simmer. Whisk in the butter paste. Return the chicken to the pan, skin-side up. Simmer, covered, 30-45 minutes, until an instant thermometer reads 165 degrees. Uncover, add the vinegar, and then serve topped with sauce and bacon.
