Ingredients

    3 very ripe bananas, peeled, and mashed with a fork
    1/3 cup Butter, melted
    1/2 cup Sugar
    1 egg, beaten
    1 teaspoon Vanilla extract
    2 tablespoons Kahlua (or another coffee liquor)
    1 1/4 cup All-purpose flour
    1 teaspoon Baking soda
    1 teaspoon Cinnamon
    1/2 cup Walnuts or Pecans
    1/2 cup Semi-sweet chocolate chips

Directions

1. Preheat the oven to 350 degrees Fahrenheit.
2. Peel and mash 3-4 ripened bananas in the mixing bowl.
3. Add 1/3 cup of melted butter and mix together.
4. Mix in 1/2 cup sugar, 1 beaten egg, 1 teaspoon vanilla, and 2 tablespoons Kahlua.
5. In a separate bowl, combine flour, salt, baking soda, an cinnamon - blend into wet mixture.
6. Stir in chocolate chips and nuts.
7. Pour the mixture into prepared muffin tins, 3/4 full
8. Bake for 15 - 20 minutes; If making a loaf instead, bake for 50 - 55 minutes

Serving Size: Makes 12 Muffins (or 1 loaf)
