Number of Servings: 12


    1 1/2 cups whole wheat flour
    1/2 cup spelt flour
    1 tsp baking powder
    1 tsp baking soda
    1 1/4 tsp cinnamon
    1/2 tsp pumpkin pie spice
    1/4 tsp nutmeg
    1/2 tsp salt
    1/4 cup splenda
    1/2 cup applesauce, unsweetened
    1/4 cup honey
    1 cup pumpkin pie filling
    1 cup apple juice

    2 tbsp whole wheat flour
    2 tbsp brown sugar
    1 tbsp splenda
    2 tbsp butter
    1/4 tsp cinnamon


Mix all dry ingredients together. Add in applesauce, pumpkin, honey and apple juice. Stir until well blended.

Divide batter into 12 greased muffin cups.

For the struesel, combine the dry ingredients and cut in the butter until it resembles crumbs. Spoon the struesel over the top of the batter.

Bake for 23-28 minutes, or until done. Let cool for a few minutes then invert onto cooling racks to cool completely.
