Introduction

Ingredients

About 3 lbs of potatoes peeled and cubed (about 12 med potatoes)
8 oz of Cabot Vermont Sharp Cheddar grated
2 medium raw onions chopped
2 TBSP vegetable oil
fresh chives
tsp salt + to taste
5 cups water
Tips
I love crackers, so I don't over add the salt, due to the crackers
Directions
Cook the onions in the vegetable oil, till translucent.
Add in the water, tsp of salt, and potatoes. Bring to boil then turn to simmer and cover.
Once the potatoes are tender mash or puree to taste. Then add the cheese slowly and mix it in. Then remove off the heat and add the chives.
Ladle out and enjoy!
Serving Size: Makes about 6 bowl size servings (2 ladles worth/ bowl)
