Introduction

This is one of those - "Hm, this sounds good" - concoctions. This is one of those - "Hm, this sounds good" - concoctions.
Number of Servings: 4

Ingredients

    1/2 of each green, red, and yellow large bell peppers
    1 C carrot matchsticks
    1 small onion, sliced into slivers
    2 C mushrooms, cleaned and sliced
    12 oz eye of round or other steak
    1 pkg Suddenly Salad - Southwest Grains, prepared

Tips

Cook time includes time to prepare salad. Otherwise, the meal will be ready in about 30 minutes.


Directions

Broil or grill steak. Cut into thin strips.

Stir-fry veggies in a skillet prepared with cooking spray until tender-crisp.

Plate 1/4 of the veggies, topped with 3 oz of steak. Add 1/2 cup of salad on top of that. Enjoy!
