    1 Cornish Game Hen
    1 8 oz package of frozen spinach
    1/2 cup shredded swiss cheese
    1/2 cup cottage cheese
    1 egg
    1 tbsp chopped onion
    1 tsp chopped garlic
    1 tsp olive oil
    salt and pepper


*Pre-heat oven to 325 degrees.
*Rinse thawed cornish hen and pat dry.
*Lightly score the skin of the hen with a sharp knife to hold seasoning.
*Pour 1 tsp olive oil in palm and rub on outside and inside of the hen.
*Do the same with the garlic and salt and pepper.
(You can put on your favorite spices here). Set in a baking pan.
*Sqeeze extra liquid off of frozen spinach.
*Mix cottage cheese and swiss cheese with the spinach.
*Add the onion and salt and pepper. Spoon into the hen. Cover pan with tin foil.
*Cook in the oven for approx. 30 minutes, then take off the foil, so the hen will brown. Take out and let cool about 10 minutes. Slice the hen in half. Drizzle pan drippings over the top.
*Serves two.
