    4 cups diced apple ( I like Braeburn)
    1 cup Splenda
    4 egg whites
    0.5 cup unsweetened applesauce
    2 t vanilla extract
    2 cups all purpose flour (or you can half and half with whole wheat flour)
    2t baking soda
    2 t cinnamon
    1 t salt
    1 cup raisins


Preheat oven to 325 degrees F. Spray muffin tin with cooking spray.

Mix apples, sugar and Splenda in a bowl and set aside. In another bowl mix eggs, oil, applesauce and vanilla. In third bowl, mix the dry ingredients. Stir egg mix into apples and mix well. Slowly add the flour mixture and mix well. This is a very thick batter. Mix in raisins. Spoon into muffin tins and bake for about 25 minutes or until tester inserted in the center of the muffin comes out clean.
