    3 boneless skinless chicken breasts
    1/4 cup spinach
    3 roasted red peppers
    3 slices mozzarella cheese
    1/4 cup canned tomatoes
    2 tbsp heavy cream


Preheat oven to 350. Pound chicken breasts thin. Cook spinach according to package directions. Apply a thin layer of spinach to flattened chicken. Cut pepper in half and place each piece on chicken, covering spinach. Cut cheese in half and place on top of the pepper. Roll and secure with a toothpick. Bake for 30 min. While baking, puree tomatoes and heavy cream. Remove chicken from oven and top with tomato mixture and bake for 15 more min.
