A sweet and tangy alternative to the usual chicken salad. A sweet and tangy alternative to the usual chicken salad.
Number of Servings: 6


    You will need:

    1/2 cup seedless red grapes, quartered
    1/2 cup any type apple (I used a Jazz apple)
    4 chicken breasts, cubed
    1/2 cup light miracle whip
    1 Tbsp lemon juice
    Salt and other seasonings to taste


Serve as desired. I like to put about 1/2 a cup in a lettuce wrap with a sprinkle of cheddar cheese.


Cut and cook the chicken in olive oil with seasonings until cooked through. While chicken is cooking quarter grapes and dice half of an apple. Combine the grapes, apples, lemon juice and miracle whip in large bowl. When chicken is done cooking drain excess juice, place in a bowl and cool in freezer for 5-10 min. Add chicken to grapes, apples, and miracle whip mixture. Combine well.

Serving Size: Makes about 6 servings.
