Ingredients

    1/2 Tbsp olive oil
    2 Small carrots, peeled and finely chopped
    1/2 Large Vidalia onion, finely chopped
    1 med. garlic clove minced
    1/2 tsp ground cumin
    1/2 tsp ground ginger
    1/4 tsp ground coriander
    1/4 tsp ground turmeric
    1/4 tsp ground cinnamon
    1 dash (or more) salt
    1 14.5 oz can of fire roasted tomatoes
    1 16 oz garbanzo beans in water ,well rinsed
    1/2 cup dry lentils
    2 cups low sodium chicken broth ( or veggie)
    juice from 1/2 lemon
    3 Tbsp cilantro chopped.


Directions

Heat oil in large pot, add onions and carrots cook until soft about 10 minutes, add the garlic ,cumin , ginger coriander ,turmeric and cinnamon cook stirring often ,until mixture is fragrant 1 - 2 minutes ,add the tomatoes and
cook while stirring, 5 minutes then add the lentils and garbanzos together with the broth bring to a simmer on medium low heat. Cook until lentils are tender 15 -20 minutes. Remove from heat ,stir in the lemon juice and cilantro .Serve .

Serving Size: makes 4 servings @ 1.5 cups each.
