Ingredients

    1/2 cup flour
    1/4 tsp baking soda
    1/8 tsp salt

    1/2 cup small curd cottage cheese (I used 4% milkfat)
    2 eggs
    1 Tbsp oil
    1 Tbsp sugar
    1/4 cup skim milk



Tips

Delicious with blueberry or blackberry compote!

You can substitute whole wheat flour for a healthier pancake. You can also substitute a lower fat cottage cheese, but the pancakes will not brown the same way.


Directions

Heat a griddle over medium high heat.

Mix the dry ingredients: flour, salt and baking soda and set aside.

Puree the cottage cheese in a food processor if you want a smooth texture in your pancakes (especially if you have small children that object to lumpiness). Add the milk and blend until smooth.

In a large bowl, beat the eggs until light and lemon colored. If you want to go crazy and impress anyone watching, you can separate the whites from the yolks and beat the whites to a soft peak stage and set them aside. Whisk the sugar into the eggs (or egg yolks) then beat in the oil. Add your cottage cheese and milk (blended or just as they are). Stir in the dry ingredients and stir just until blended.

If you did the egg whites separately, fold them in now and mix gently until they are incorporated.

Pour 1/4 cup of batter onto the pre-heated griddle for each pancake. Cook for about 2 minutes on each side until golden brown and cooked through.

Serving Size: Makes 12 pancakes - 3 per serving (50 calories per pancake)
