A great cold salad for summer, with zest! A great cold salad for summer, with zest!

Ingredients

    2 cans Black Beans
    1 can Yellow Sweet Corn
    2 diced Roma Tomatoes
    1 cup Red Bell Pepper, diced
    1 cup Red Onion, chopped
    1 cup Green Onion, chopped
    Cilantro, 2 tablespoons (fresh)
    1 JalapeƱo, chopped (seeded)
    1/4 cup Lime Jice
    2 tsp Salt (optional)
    2 tsp Black Pepper
    1 tsp Cumin, crushed

Directions

Mix all ingredients and refrigerate for 1 hour before serving.
