Ingredients

    2 eggs
    1 teaspoon basil paste
    2 dashes salt
    1 dash pepper
    1/8 cup shreeded Colby Jack
    1 slice bacon, cooked then crumbled
    1/4 cup frozen spinach or 1 cup fresh spinach

Tips

If you prefer, you can bake the ingredient at 375 for 20 minutes. Use this technique if you are multitasking and don't want to stand over the skillet. :-)


Directions

Place skillet on stove at medium temperature setting to preheat. If using frozen spinach, place in microwave for one - two minutes to unthaw before adding to eggs.
In a medium bowl, scramble 2 eggs. Add all ingredients to the eggs, then mix again. Pour into a skillet preheated on medium temperature. Cook until whole mixtures firms up on the bottom for easy turning. Turn entire pie over and cook about 2 minutes on the other side.
