Introduction

Ingredients

    1 onion (diced)
    6-7 celery stalks (diced)
    1 bell pepper (diced)
    9 oz carrots (diced)
    1 tbsp chopped garlic
    3 15 oz cans petite diced tomatoes
    1 15 oz can sweet corn
    1 15 oz can light red kidney beans
    1.5 lbs 93% fat ground beef
    2-3 fresh mushrooms (diced)
    3 tbsp chili seasonaing
    1 tbsp cumin
    1/2 tsp pepper

Tips

I put 1 cup whole wheat pasta and 1.5 c chilli in lunch containers and freeze. Makes plenty for two people for lunches all week long.


Directions

Brown ground beef, drain fat. Dice all veggies in food processor and add to slow cooker. Add canned vegetables (rinse beans & corn well) and ground beef to slow cooker. Add 4 cans of water. Add spices. Cook on medium for 1-2 hours.
