Ingredients

    1 cup MinuteŽ Ready to Serve Jasmine Rice
    1/4 cup coconut milk
    1 tsp curry powder
    1 cup Asian-style frozen vegetables, thawed
    1/4 cup cooked shredded chicken
    1 Tbsp peanuts, crushed
    1 Tbsp prepared chutney, optional

Directions

Prepare rice according to package directions.
In a small microwave-safe bowl combine coconut milk and curry powder. Add vegetables and chicken. Microwave on HIGH 2 minutes.
Fold in rice. Top with peanuts and chutney, if desired.

Serving Size: Makes 1 serving

    If I were making this recipe, I'd use brown rice (good carb), halve the quantity of rice (1/2 cup), double the quantity of vegetables, double the amount of curry powder and use low-fat coconut milk. (I keep unused portions of coconut milk frozen.) - 6/2/15
