Introduction

Ingredients

    2 pounds of ground turkey
    1 green pepper chopped
    1 red pepper chopped
    1 yellow pepper chopped
    1.5 cup onion
    2 jalapeno peppers chopped
    4 cloves Garlic
    1.5 teaspoon Cayenne Pepper
    1 tbsp Chili Powder
    2 cups black beans (I used black eye peas)
    1 Cup Corn




Tips

Because this dish is low in calories - We weighed out 1 ounce of Doritos, 1 ounce of cheese and 2 tablespoons of sour cream as topping for each of us, and split it up over two servings. Also great with Chipotle Tabasco sauce!


Directions

Serving Size: Makes 12

Heat oven 375
Brown Ground turkey, Add chopped peppers, onions and garlic and saute until tender. Add beans and corn and seasonings, stir well. Remove from stove and pour into a greased 12x9 baking pan.
