Number of Servings: 4


    1¼ cups wter
    ½ cup uncooked brown rice
    ½ tsp salt(may omit)
    1/4 tsp dried basil
    1/2 tsp black pepper
    1 Tbsp vegetable oil
    1 medium carrot, peeled and chopped
    1 small zucchini, chopped
    1 small yellow squash, chopped
    1 small red bell pepper, seeded and chopped
    2 green onions with tops, thinly sliced (1/4 cup)


Bring water to a boil in medium saucepan on medium heat. Add rice, salt and black pepper. Return to a boil Reduce heat to low. Cover. Simmer 40-45 minutes or until rice is tender and water is absorbed.

Heat oil in large skillet on medium high heat. Add carrot, zucchini, yellow squash, red pepper and green onions. Cook and stir 5-7 minutes or until vegetables are heated.

Transfer rice to a serving bowl, add vegetables. Toss to combine and serve.
