Introduction

My first attempt at black bean brownies. Tried to make them super clean and healthy. Next time I will use vanilla instead of almond extract, and raw organic sugar instead of agave. Ingredients

    1 can (15 oz) reduced sodium black beans (rinsed and drained)
    9 tbsp egg whites
    3 tbsp coconut oil
    1 small extra ripe banana
    5 tbsp cocoa powder
    3 tbsp agave nectar
    4 tbsp pb2 (powdered peanut butter)
    2 tsp baking powder
    1/2 tsp baking soda
    1/4 tsp sea salt
    1/8 tsp almond/vanilla extract
    1/4 cup chopped walnuts and almonds
    1/4 cup dark chocolate chips

Tips

I topped each of my cupcake/brownies with 1/2 a square of Trader Joe's dark chocolate and then sprinkled with a little coconut.


Directions

Preheat the oven to 350
Mix all ingredients (besides walnuts/almonds and chocolate chips) in a food processor
Fold in nuts and chips
Add mixture to individual cup cake tins (I used silicone cup cake holders w/ a little coconut oil)
Bake for 20-22 minutes


Serving Size: makes 12 brownies
