Ingredients

    1 head cauliflower, cleaned and chopped into florets
    1/2 red onion cut into wedges
    4 carrots, cleaned and sliced
    2 cups fresh snow peas, cleaned
    1 bunch scallions, cleaned and cut into 4 inch strips
    2 tbsp extra virgin olive oil
    1/8 c. white wine
    salt & pepper to taste

Directions

Heat the oil over medium heat in a large, deep pan. Add the cauliflower, onion and carrots and saute for about two minutes. Add the scallions and snow peas and mix well. Add white wine, cover and reduce heat to low. Steam/simmer for 5 minutes or until cauliflower is soft but not mushy.
