Ingredients

1 c. Orzo Pasta
1 Zucchini, chopped & halved
1 Red Bell Pepper, chopped
1 pint Grape Tomatoes, halved
2 c. Fresh Baby Spinach
2 tbsp. Red Onion, finely chopped
1 tbsp. EVOO
1 clove Fresh Garlic, minced
2 tbsp. Red Wine Vinegar
Salt & Pepper
1/4 c. Feta Cheese
Directions
Makes 8 Servings
1) Cook Orzo Pasta as directed, subtracting any salt or oil
2) Slice & halve the zucchini. Heat a skillet with the EVOO and minced garlic. Add the zucchini, salt & pepper. Cook slightly but make sure the zucchini remains firm.
3) Combine the bell pepper, tomatoes, red onion, feta and Red Wine Vinegar in a bowl.
4) Pour the cooked Orzo in a large bowl and add the spinach. Stir for a minute until the spinach wilts a little. Add the ingredients in no. 3.
5) Serve & Enjoy!
