Ingredients

Peppers, sweet, red, fresh, 1 large (2-1/4 per lb, approx 3-3/4"
Mushrooms, fresh, 1.5 cup, pieces or slices
Capers, canned, 1 tbsp, drained
Arugula, 1.5 cup
Kalamata, Green Olives, pitted, 2 oz
Vinaigrette
Balsamic Vinegar, 3 tbsp
Garlic, 1 clove
Olive Oil, .25 cup
Salt and pepper
Directions
Roast pepper. Make vinaigrette. Toss mushrooms, pepper and capers into vinaigrette. Marinate for 30 minutes. De-stem arugula and toss with vinaigrette. Garnish with olives.
