Introduction

Ingredients

    3/4 cup Brown Rice, cooked
    1 (4 oz) can Tuna, Chunk White Very Low Sodium
    1.5 tbsp Red Onion, chopped
    1 Jalapeno Pepper, chopped
    2 oz Black Beans, cooked
    .5 cup Cherry Tomatoes, sliced in half
    1 cup Spinach, chopped
    2 tbsp Fat Free Italian Dressing
    2 tbsp. water
    2-3 tsp. of Taco seasoning, salt-free

Tips

Used homemade salt free taco seasoning, Kraft Fat Free Italian Zesty Dressing, Uncle Ben's Boil in Bag Brown Rice, and Starkist Selects Chunk White Very Low Sodium Tuna.


Directions

1. Cook rice according to package directions.

2. Meanwhile open and drain tuna and prepare vegetables and beans.

3. In a small bowl mix thoroughly dressing, water and taco seasoning.

4. Once rice is cooked and semi cooled mix all ingredients, besides dressing mix, in a medium sized bowl until combined.

5. Add dressing mix to bowl while slowly stirring to combine.
