    1 packet of Ghirardelli Triple Chocolate brownie mix
    2 eggs, room temperature
    1/3 cup coconut oil, liquefied
    1/3 cup water


I use 2 eggs rather than one as indicated in the directions on the pan because I like them better that way. You can use 1 if you like. Also, the recipe says they make 16 brownies but I only have a 12 count muffin tin so I make it with 12 servings instead of 16.
Let coconut oil cool for 5-10 minutes before mixing with eggs and water.
You should be able to remove brownies easily using the tip of a knife to loosen them.
Add nuts if you like but make sure to account for that in you nutritional log.


Preheat oven to 325 degrees. Place coconut oil in small oven proof container and melt to liquefy. Prepare muffin pan by lightly greasing with coconut oil.
Place water, oil and eggs in mixing bowl and stir until fully mixed. Add brownie mix and still until well blended.
Fill muffin pan evenly with brownie mixture.
Bake for 35-40 minutes or until toothpick come out clean when poked into brownie located in center of the muffin tin.
Cool completely before removing from pan.
