Ingredients

2 bitten eggs
1 tbsp of coconut oil.
3 garlic cloves.
1 link Cajun Style Andouille Sausage
1 cup red onion chopped
1 tbsp ground turmeric
1 tsp ground ginger
1 tbsp dried parsley
1 tsp ground oregano
2 small Roma tomatoes
1 cup baby spinash
2 slices of American Cheese
1 tbsp Greek yogurt
Salt and pepper to taste

Directions
Slowly heat-up the coconut oil and add the garlic for 1 minute.
Add the sausage and let them cook for about a minute more on medium heat.
Add the onions and the spices. Let it cook for another minute.
Add the spinash and they are cooked, get them out of the heat.
In a sarate bowl. Shake the eggs and cook it from one side. When that side is done and you turned it, add part of the sausage with its mix to half the side of the omelette.
Add the cheese and fold the other side of the omelette. Let it cook for about 30 seconds and turn it. Let it cook on he other side for about another 30 seconds and it is done.
You can add the rest of the mix and add Greek yogurt if you'll like.
