Introduction

Easy to make and a crowd pleaser! High in protein and fiber and not too bad on the calories! Easy to make and a crowd pleaser! High in protein and fiber and not too bad on the calories!
Number of Servings: 12

Ingredients

    1 tablespoon oil (I used olive oil)
    2 lbs 93% lean ground beef
    1 medium onion, chopped
    2 packages taco seasoning mix
    1 package Ranch dressing mix
    1 can whole kernel corn, undrained
    1 can pinto beans, undrained
    1 can black beans, undrained
    2 cans mild Rotel, undrained
    1 can diced tomatoes, undrained

Tips

Optional: serve with cheese, sour cream or tortilla chips.


Directions

Brown meat and onion in oil. Put rest of ingredients in pot and heat through.

Serving Size: Makes about 3 quarts of soup or 12 cups. I count a serving as a cup.
