Ingredients

    1 tsp. black mustard seeds
    3 bay leaves
    one shallot
    3 cloves garlic
    4 tablespoons sesame oil
    2 cups red lentils
    2 tsp Indian spice mix (less or more to taste)
    6 cups water
    1 can petite diced tomatoes



Tips

Serve with rice or as a soup. Cilantro leaves and lemon wedges are nice garnishes


Directions

Pour sesame oil into heated wok.
*As oil heats, add black mustard seeds and wait 'til they burst
*Add the shallots and garlic and cook slowly til slightly brown
*Add the bay leaf, lentils and spice mix. Stir until lentils are coated with the spice mix
*Add water; bring to boil,then lower stove heat, cover and cook for thirty minutes until lentils are mushy
*Add tomatoes; cook for 15 minutes or until tomatoes are completely incorporated into the lentils

Serving Size: pot makes 10 1 cup servings
