Introduction

Ingredients

    1/4 chopped red onion lightly fired in 1 tbsp. olive oil
    2 chopped carrots
    2 chopped parsnip
    120 grams cubed butternut squash
    50g of mixed red lentils and rice
    250gram tinned tomato
    2 tbsp. Pataks curry paste

Tips

I serve with mango chutney or Fage Total 0% fat yoghurt (calories not included here).


Directions

Lightly fry the onion. Add it and all other ingredients to the slow cooked add enough water to just cover and leave for about 4 hours.
