    1 lb. ground turkey, 93% lean
    20 oz. (2 jars) spaghetti sauce
    1/2 c. water
    1 c. cottage cheese, nonfat
    1/2 c. ricotta cheese, fat-free
    2 Tbsp. parmesan cheese, grated
    1/4 c. egg substitute
    1 tsp. pepper
    8 Lasagna noodles, uncooked
    4 c. mozzarella cheese, shredded, fat-free


In bowl, crumble turkey. Microwave on high 4-5 min. or until browned. Drain.

Stir in sauce and water with the turkey.

In separate bowl, combine cottage cheese, ricotta cheese, egg, pepper.

In greased 9x13" baking dish, spoon in 1/2 c. meat sauce mixture.

Alternate layers of noodles, egg mixture, mozzarella cheese, and meat sauce. Do not let uncooked noodles touch sides of dish or they will harden.

Form at least two full layers, ending with mozzarella cheese. Sprinkle parmesan cheese on top.

Cover with waxed paper and place in microwave. Heat on high for 8 minutes.

Reduce power to medium and cook 30 minutes.

Let stand 15 minutes before serving. Enjoy!

Makes 12 4x4inch servings.
May make ahead and store in refrigerator, then just cook in microwave as instructed above.
