took this straight from 300 Calorie Main Dishes cook book. took this straight from 300 Calorie Main Dishes cook book.

    1tsp Olive oil - Olive oil Misto spray
    1/2 lb boneless skinless chicken breast cut into 1 inch cubes
    4 medium zucchini's sliced
    1 can -14 oz diced tomatoes
    1- 14 oz chicken broth
    1tsp Italian Seasoning
    1c uncooked whole wheat couscous


coat your pan with olive oil heat over mid high heat. Once hot put chicken into pan and cook for about 4 minutes or until lightly browned.

Add Zucchini, Tomatoes, Broth, and Seasoning. Reduce heat to low; simmer for 15 minutes stir occasionally.

Stir in Couscous : remove from heat and let stand covered for 7 minutes. stir and serve.
