    2 slices of Udi's Ancient Grain Gluten Free Bread
    1 1/2 tablespoons Extra Virgin Olive Oil
    4 tablespoons grated Grana Padano Parmesan Cheese


Great presentation. Can use baguette slices in place of gluten free if desired.


Drizzle olive oil on bread slices on both sides. Grate Parmesan Cheese. Place cheese into four little "piles" in a non-stick skillet. Divide bread into four pieces and place on top of parmesan cheese. Turn on heat to med high to prevent burning the cheese. Saute 4-5 minutes until the cheese is melting. Turn over the bread and brown the bottom side. Let cook and cut into crouton size pieces or leave whole on place on soup. Garnish with sprig on basil, if desired.
