    12 Red Baby Potatoes, thinly sliced
    1 1/2 lbs of Italian Sausage
    1 Red Onion, chopped
    4 cups Blue Menu Low-Sodium chicken broth
    3 cups homogenized milk
    2 cups half and half cream
    1/2 teaspoon fresh or dried oregano
    1/2 teaspoon red pepper flakes
    Celtic sea salt
    Fresh ground pepper
    3 cups of Kale, clean and torn into bite-size pcs - veins removed


Could add a splash of heavy cream at the end for added richness.


Boil potatoes until they're just starting to soften - drain and set aside. In a large pot, crumble and brown Italian sausage with onions over med heat - about 6 minutes. Drain as much fat as possible, add chicken broth, milk, half and half, oregano, salt, pepper and flakes and bring to a simmer for approx. 30 minutes. Adjust seasoning, if necessary. Add the potatoes and then stir in the kale. Cover and simmer for an additional 10 minutes.
