    5 tablespoons grated Parmesan cheese
    1 teaspoon paprika
    1teaspoon dried thyme
    1/2 teaspoon salt
    1/2 teaspoon freshly ground pepper
    2 russet potatoes, each cut into 8 wedges


1. Preheat oven o 375.
2. Place the Parmesan, paprika, thyme, salt, and pepper in a large resealable plastic bag and shake the bag to combine the mixture.
3. Arrange the potatoes in a single layer on a rimmed baking sheet. Spray lightly on all sides with cooking spray. Working the batches, add several wedges to the plastic bag and shake well until they are coated with the cheese mixture.
4. Return the wedges to the baking sheet and bake, turning once halfway through, until golden and tender, 40 to 50 minutes.
