    4 tsp Canola Oil
    2 cup Onions, chopped
    4 cloves Garlic, minced
    4 (28 oz) cans Crushed Tomatoes
    2 qt Water
    1 3/4 qt Chicken stock
    2 cup Alphabet Pasta
    2 Cup Parsley, chopped
    4 Cup Frozen Broccoli, chopped
    4 Cup fresh sliced Carrots
    4 Cup Celery, diced
    1/2 Cup Parmesan Cheese, grated
    2 tsp Salt
    Pepper to taste


1) Heat oil in a saucepan over medium heat. Add onion and garlic and cook ubtil the onion is soft, about 2 min.
2) Add chicken broth, water, tomatoes, pasta and parsley to the saucepan. Bring liquid to a boil, reduce heat and simmer for 10 min.
3) Add broccoli, carrots and celery to soup. Cook 10 min. Add salt and pepper.
4) Ladle 8 oz soup into bowls. Top each with 1 tsp parmesan cheese.
