Ingredients



    *Potato, raw, 6 medium (2-1/4" to 3-1/4" dia.)
    Hard boiled egg (I egg), 4 serving
    Onions, raw, 4 medium (2-1/2" dia)
    Beans, pinto, 2 cup
    *Extra Virgin Olive Oil, 4 tbsp
    juice from 1 lemon
    pinch of salt
    pinch of pepper

Tips

You can add olives. And you can also use scallions instead of onion.


Directions

Clean the potatoes' skins. In a pot bring water to boil and add the potatoes and eggs. Boil for 20-30 min or until you can pierce potatoes with a fork.
Drain the beans.
Finely slice the onion.
Once the potatoes are cooked, drain them and let them cool down. Peal them and the eggs and cut in slices.
Add all in a bowl, together with the olive oil, lemon juice, salt and pepper
