Ingredients

1 head fresh green cabbage
1/4 head fresh red cabbage
1/4 sweet onion
3 medium sized carrots
3/4 cup granulated sugar
1/4 cup vegetable oil
4 tsp Apple Cider Vinegar
2 cups Low-Fat Mayonnaise
1 tsp salt
Directions
In a food processor, finely mince 1/4 of a sweet onion. Add to a large bowl. Then chop both the red and green cabbages and carrots using the "cheese grater" attachment on the food processor. Add to bowl.
(**note: if you don't have a food processor, just mince ingredients as fine as you can, about the size of long grain rice**)
Mix the last five ingredients in a separate bowl, then combine with the cabbage mixture. Incorporate fully. Chill for a minimum of two hours before servings. Chilling overnight is best.
Serving Size: Makes 20 half-cup servings
