Ingredients

    1 cup fat free Greek Yogurt
    2 ripe medium Bananas
    2 large Eggs
    2 cups Rolled Oats, old fashioned or quick
    1/4 cup Brown Sugar
    1 1/2 tsp Baking Powder
    1/2 tsp Baking Soda
    1/4 cup Sunflower Seeds

Tips

Although RunningWithSpoons says this makes 12 muffins, I got 16. My liners must be smaller, but I don't mind having more, smaller muffins. They can easily be entered in nutrition tracker as 3/4 of a serving each.
You can change out the seeds for other nuts, seeds, dried fruit, or chocolate chips, but sure to add them to your nutrition tracker.


Directions

Preheat oven to 400 F. Prepare 12 muffin tins by spraying with cooking spay or lining with paper, silicone or parchment liners. Paper liners may need to be sprayed with cooking spray.

Put all ingredients except seeds in blender or food processor. Process on high until oats are broken down and batter is smooth and creamy. Stir in seeds by hand.

Pour batter into prepared muffin cups, distributing evenly among all 12.

Bake for 15-20 minutes, until tops are set and toothpick inserted in the middle comes out clean. Allow to cool about 10 minutes before removing.

Serving Size: Makes 12 muffins.
